I'm pretty okay with notepad so if there's a way to hex edit this without frying the save, that'd work too. Haven't found any options for just an ME1 editor that I can edit the save and continue playing ME1. I saw Gibby's savegame editor but that's really only for ME2. It would take something weird in the rehash/save to mess up the entire file but I suppose it can happen. For saves I always do at least two before I use the editor that way there is the one that was changed which is always the higher number save and the one that is not modded which is the one behind it.
